We can use non-newtonian properties to make the fluid "defy gravity" and climb up a spinning rod. This is called the Weissenberg effect.

Dough hooks are helixes, and therefore are not symmetrical. Like gloves, there is a "left" hook, and a "right" hook. If they are installed correctly, then the dough is pushed down into the bowl. If you switch them, however, the hooks will draw dough upward into your beater. You may want to check if one of your hooks is marked to help you keep them straight.

Don't know for sure, but I wonder if the gluten matrix gave it the viscoelastic property. Like the slime in the video, over worked high gluten dough develops that elastic spring back when I try to pull the dough for Sicilian style pan pizza.

Yes, it is. And, that property has a name, too: to be thixotropic, or thixotropy. Look it up, it describes ketchup perfectly.

Oh, you meant you tested ketchup, and also tested ooblek. I thought you meant you mixed them together. Which... well, maybe that does work, depending on the proportion of the mixture? Or maybe not? Did you try mixing together non-Newtonian fluids? (I would try this if I had a bit more time and a bit more cornstarch on-hand - the former being a bit bigger of an issue than the latter.)

So that's why some ketchup had a cameo appearance in the video. This property has a very practical application, btw.: It's why you can encourage those stubborn last few portions to come out of the bottle by smacking it, even if you're hitting the bottom end. (Which would be the wrong end for other fluids; Oobleck would just get even more stuck.)

@BadHabitMarco Ketchup is a non-newtonian fluid in the opposite way that Ooblek or the slime in this video is. When Ooblek or the slime are under sheer pressure they thicken and become more viscous, whereas ketchup is thick and viscous when it is not under sheer pressure and it becomes thinner and less viscous when it is under sheer pressure.

Yeah, the shear thinning nature of ketchup is the reason that whacking the bottom of an upturned glass bottle can actually help. One would usually think that this sort of whacking would simply push the fluid further in to the bottle (inertia and stuff) but ketchup is an exception. Still, I prefer the turn-your-arm-into-a-centrifuge method!

I have an everyday physics theme for you: it's really hard to sink a balloon deep enough for it to compress to the right volume to match the density of the water around it. All of this is down right impossible to keep stable.

I am pretty sure that this effect is taught as part of the scuba diving training.

Air is a fluid too, like most usual gaz ... and i think with gaz, the same thing is happend and more easily understandable

Always water for fluid, but water is not so usual as fluid, gaz are real fluid or better 'models' for fluids than water ... :)
